Saturated fats refer to fats that have the maximum number of hydrogens bonded to their carbons, meaning that there are no double bonds. Unsaturated fats means there is one double bond present. Polyunsaturated means there are multiple double bonds. Saturated fats (like butter) are solid at room temperature, whereas unsaturated fats (like vegetable oil) are not. Because of this, various scientists wanted to figure out how to saturate unsaturated fats. They figured it out! But in the process, they changed the transfiguration of these bonds from cis (which our body can digest) to trans (which our body cannot digest).
