The answer is B: As the substrate and enzyme come together, it displace much more water from the active site of the enzyme. Thus, the decrease in entropy caused by the enzyme coming together with the substrate is counteracted by the increase in entropy caused by the release of the water molecules (which leads to a NET increase in the entropy of the universe). Answer A is wrong because different orientations of amino acids rarely result in a change in entropy significant enough to make a different. Answer C is wrong because enzyme substrate interactions are independent of one another. One enzyme coming together with one substrate will not affect the way another substrate is interacting with another enzyme (in most cases). Answer D is just a wrong answer. Enzymes and substrate do come together, and thus, D makes no sense.
